How to Build the Ultimate Japanese Avocado Toast
If you’re not familiar with these Japanese pantry items, I’ve provided affiliate links to the brands that I use.
Start with a killer base – A thick slice of toasted shokupan (Japanese milk bread) or sourdough.
Avocado, but make it better – Mash it up with a splash of soy sauce, yuzu, or sesame oil for an instant flavor boost.
Toppings galore –
Furikake for crunch and umami - there are variety of different flavors and brands, I recommend experimenting with the different flavors to see what you like best.
Asian salt - If you’re just starting to experiment with Asian salts, I recommend starting with Momofuku umami salts or the umami salt from Oakland Spice Shop (one of my favorite spice vendors.
Pickled ginger for a tangy kick
Soy sauce marinated eggs for extra protein
Kewpie mayo drizzle for that creamy, slightly sweet magic
Nori (seaweed) strips for crunch and flavor
Togarashi, chili oil, garlic chili crunch or sriracha if you want some heat

This avocado toast recipe allows everyone in the house go wild with their toppings! Set up an avocado toast bar and let creativity take over. Kids love to sprinkle on furikake (because who doesn’t love tiny, crunchy flakes - as a kid, I used to call these rice sprinkles), and adults can elevate it with pickled ginger, kimchi or lightly salted or pickled cucumbers.

Ingredients:
Sliced bread (I like to use wheat or Shokupan bread from the Asian market. Wheat, if we’re trying to be healthy. Really, you can use any bread you like - a bagel would be delicious)
1 ripe avocado per 2 pieces of bread (this will also be dependent on how big your avocados are)
Soy sauce marinated eggs - my recipe is here!
A dash of lemon juice (it helps keep the avocado fresh and adds brightness)
Salt and pepper to taste (or use soy sauce in lieu of salt)
1 tsp sesame oil or extra virgin olive oil
Optional Toppings:
Togarashi
Furikake
Pickled ginger
Green onions
Kimchi
Lightly salted or pickled cucumber slices
Toasted sesame seeds
Crushed nori packets
Directions:
If making with soy sauce marinated eggs - prepare this recipe 4 hours to 1 day before.
Prepare your mashed avocado (you can also cut your avocados in thin slices if you're short on time). Mash up ripe avocados with some lemon juice, salt or shoyu, and sesame or evoo. Taste test and adjust the mash to your liking.
Toast your bread and top with the smashed avocado.
Cut the soy sauce marinated eggs in half, place on top of the avocado and sprinkle on furikake and pickled ginger.
Get creative! This is where you have free rein to experiment. You an keep it simple with avocado slices and furikake, or add green onions and dried seaweed pieces. The world is your oyster here!
